As a busy single mom, the last thing I want to do at night is cook dinner. This results in a lot of overpriced DoorDash orders which is TERRIBLE for my budget.

I knew if I had a list of easy one-pot recipes to just throw in my Instant Pot at a moment’s notice, it would make meal planning and making dinner MUCH easier.

I wanted to share this list of meal ideas with you so hopefully, you get good use out of it too!

The best part about these Instant Pot recipes is that they typically make more food than you’ll need, so you’ll have leftovers to eat for a couple more nights. This stretches the budget even further. Win-win!

I absolutely LOVE spicy food, but I typically make myself and my toddler the same meals to save money. So whatever I’m eating, he’s eating. That means I have to nix the spice in this recipe to save his sensitive mouth.

But it’s still really yummy without it and I know I’ll get to enjoy the spicy side of life again one day. Oh, and did I mention it happens to be gluten-free?

I recommend buying some of those steamable vegetable bags you can pop in the microwave. You can find them cheap at discount groceries like Aldi’s.

Plus rice and beans together make a complete protein meaning that even though it’s meatless, you’ll still feel full.

I am a sucker for shrimp pasta! It’s a go-to dinner of mine and being able to make it in the Instant Pot makes it way easier.

TO make this recipe even cheaper, buy your frozen shrimp from ALDI (it’s typically much cheaper than other groceries!) OR don’t use the shrimp at all and you still have a really yummy pasta dish.

15. Instant Pot Lemon Garlic Salmon from Frozen

The fact that you can put your Salmon into the Instant Pot from frozen is truly incredible. Frozen fish tends to be cheaper and not having to remember to thaw it, takes at least one thing off your to-do list.

You could really create any flavor profile you want by adding different herbs and spices, but the dill and lemon sounds delicious!

16. Instant Pot Pumpkin Pasta

Before I tried pumpkin pasta, I thought the idea of it was SUPER strange. After coming across a recipe a few years back and giving it a try, I was hooked! It’s 10x better than you’re expecting it to be.

I’m happy to find out that it’s also an easy to dish to make in the Instant Pot.

17. 5 Ingredient Instant Pot Chili

Only five ingredients and cost less than $10 to make. This is the very definition of a cheap and easy dinner!

As a family preference, I make mine meatless (making it even cheaper) or substitute meatless meat crumbles.

Who doesn’t love a warm bowl of chili in the winter time? I’m getting hungry just writing this.

As the recipe states, these are kid approved burritos, making it perfect for us mamas. You can give your family the option of either bowls or burritos to make everyone happy.

21. Instant Pot Vegetarian Pho

I’ve been obsessed with the vegetarian pho from my local Vietnamese restaurant, but I really can’t afford to order it every night of the week. This recipe fills that void and respects my budget so I’ll only have to order it once (maybe twice) a week.

The addition of the tofu makes this recipe a little bit more work. If you want to make it easier & quicker on a busy night, either go without the tofu or prep in advance.
